River Rat Cheese Is a North Country Staple

River Rat Cheese is an iconic North Country product. Producing cheese curds, aged cheddars, and specialty spreads, as well as Croghan Bologna and NYS Maple Syrup, their products can be found across New York State.

Ingredients: Aged cheddar cheese (milk, cultures, salt, and enzymes), minced roasted garlic, chive seasoning, and natural flavors with sorbic acid as a preservative are the main components.

Aged Cheddar

American cuisine’s beloved cheddar is an indispensable ingredient and one of its most coveted cheeses. Crafted from cow’s milk and available in mild to extra sharp flavors, its lengthy aging process determines its final characteristics and ultimately determines its popularity.

Aged cheddar should be enjoyed at room temperature or slightly chilled with crackers and bread or used as a topping on salads or sandwiches. Because aged cheddar can become oily when heated, use lower settings on your stove or double boiler for best results and prevent burning or separation.

Cheese is packed with protein, calcium, and phosphorous – essential components to good bone health – while it’s an excellent source of the bone-building vitamin D. Cheese may also provide probiotics, which may improve gut health and contain probiotics, which may enhance gut wellbeing. Unfortunately, however, cheese does have high amounts of sodium, so be wary of overeating cheese at once!

Hickory Smoked Cheddar

Buttery-smooth, nutty-tasting cheddar is slowly cold-smoked for nine hours in 100% pure hickory wood smoke to produce its signature rich texture and fragrant sweet hickory and butter aromas. This award-winning cheddar is sure to add bold umami flavors to any cheeseboard, appetizer platter, or snacking session – pair it with grilled tropical fruits, roasted nuts, pale ale, or riesling, and you have yourself an irresistibly flavorful bite of goodness!

Cheddar cheese boasts a lower melting point than many other forms of cheese, enabling it to be used in recipes requiring a smoked flavor without losing its structure or taste. You can slice cheddar on sandwiches, melt it into burgers or patty melts, add it to soups, shred it into salads, or even create your mac and cheese!

Horseradish Cheddar

Horseradish’s spicy kick is balanced out by the smooth flavors of this young cheddar for an impressive pairing that brings out its full potential. It is ideal for those looking for something with extra punch in their sandwiches, wraps, or burgers!

Horseradish root is most often grated and stored in vinegar to be used as a condiment, although supplements and tea products containing horseradish have also become available recently, although there has been limited research conducted into their safety.

Horseradish is a tasty, low-calorie food packed with minerals and plant compounds that can support overall health, from its powerful anticancer benefits to vitamin C, calcium, potassium, and folate content. Furthermore, its root contains ethyl isothiocyanates to ease respiratory conditions like sinus congestion or bronchitis, while its diuretic properties help rid your body of toxins while relieving congestion.

Asiago Cheddar Spread

This cheese spread features aged Asiago and cheddar for an elegant flavor combination, and its creamy texture makes it the ideal complement to sandwiches, meals, and fresh fruit, as well as wine. Not to mention its nutritional benefits, such as calcium for bone health! Additionally, there are no artificial additives or preservatives.

Asiago cheese is a beloved Italian specialty with its signature combination of nutty flavors and firm, crumbly texture resembling hazelnuts or almonds. Asiago provides protein and calcium essential for maintaining bone and tooth health while also being low in sodium levels, helping prevent high blood pressure or heart disease.

Cheese may contain histamines that cause adverse reactions in specific individuals. Understanding histamine levels in foods will allow individuals to make informed dietary choices and manage symptoms more effectively.

Limburger Cheddar Spread

Limburger cheese is a semi-soft washed-rind variety with an intense aroma caused by Brevibacterium linens bacteria – also partially responsible for human foot odor. Though it has an unpleasant smell, Limburger actually offers mild earthy and grassy notes with subtle mushroom and citrus undertones, as well as an irresistibly delicious mild taste with a slight tang.

An avocado spread makes an excellent spread for sandwiches or can be cut into chunks to top eggs or pizza, and its intense flavor stands up well to hot dishes like Mexican and Vietnamese cuisines. Add it to zucchini noodles or stir it into broccoli soup for an intensely delicious meal!

Pair Limburger with a beer that complements its strength and personality, such as an imperial stout or extra-strong pale ale. Cabernet sauvignon or merlot wine also works well, and Wisconsin cheesemakers have developed other full-fledged stinkers like brick cheese and Liederkranz that boast their distinct personalities.

Limburger Beer Cheese

Limburger cheese may have a bad rep for being pungent, but that doesn’t make it the worst of all cheeses. The intense aroma stems from Brevibacterium Linen’s bacteria smudges on its surface that also contribute to body odor in humans; over time, this promotes pungent aroma production robust near its rind; tasting wise, it offers grassy, earthy notes with some hints of mushroom and mild tang.

Some individuals may be allergic to certain cheese varieties or lactose intolerant; luckily, there are several delicious alternatives that you can use as Limburger substitutes in your next cooking endeavor. When eaten in moderation, these alternatives provide various nutritional benefits, including fiber, protein, and calcium intake. Pair it with wine or beer for the whole culinary experience – Taleggio pairs nicely with sweet dessert wines such as Sauternes or fortified port wines.
